Mumbai sandwich is one of the famous street food from the city of Mumbai. The ultra-crisp vegetarian toast is filled with boiled potato, veggies, cheese, and green chutney. This sandwich tastes best when served hot with a hot cup of Indian masala a chai.
Best choices for making Mumbai sandwich:
Bread: You can use bread of your choice, but traditionally white bread is used. But we love dave’s killer bread thin sliced for our sandwich.
Veggies: The layers in sandwich includes veggies like cucumber, tomato, green pepper, boiled beetroot, potato, onion. You can customize according to your taste.
Cheese: Can use cheese of your choice. Used pepper jack in this recipe.

METHOD:
1 In Instant pot add potatoes, water, and salt. Cook them on MANUAL for 8 Minutes. Quick-release. Peel the potato and make slices.
2 Make green chutney. Transfer it to a bowl and keep it aside.
3 Masala mix: In a bowl add 1/4 tsp each, ground cumin, Chaat masala, ground coriander, Ground black pepper, and salt for taste.
4 Spread the butter on each slice of bread than a generous amount of green chutney on each slice.
5 Layer with boiled potato, then sprinkle the masala powder on top. Repeat the process with green pepper and onion slices and cheese.
6 Top with another slice of bread and spread some butter on the top. Apply little butter on panini maker or sandwich maker before placing the sandwich and grill it until golden color.
7 Cut it in the halve and serve it with ketchup.
