Ingredients
Cilantro - 1/2 cup
Fresh ginger - 1 -inch
Lime juice - 1/2 slice or 1 tbsp
Thai green chili - 2
Use 1 for mild spice
Salt - 1/2 tsp

Instructions
Clean the cilantro under running water and roughly chop the cilantro along with tender stalks.
Add cilantro leaves with stalks, 1-inch fresh ginger, Thai green chili, lime juice, salt in a blender or Vitamix.
Pulse thoroughly until pureed. I like chutney to be a little coarse but you can make a smooth fine paste.
HOW TO STORE GREEN CHUTNEY:
Can store green chutney in the refrigerator for a week.
Store it in an airtight container for retaining color and taste.
Can freeze this chutney for future use in ice cube tray or freezable containers.
