Coriander powder

Spices and spice condiments are the heart of Indian cooking, coriander powder is one of those. The homemade powder significantly enhances the flavor of the dish than the store brought.

Ingredients

  • Dry coriander seeds - 2 cups + 1/4 cup
  • cardamom - 6
  • Cinnamon stick - 3-inch
  • Cloves - 6
  • Star anise -1
  • small Bay leaf - 1
  • Whole javitri Mace - 1/2 flower
  • Whole black pepper - 1/2 tbsp

Instructions

  • In a pan, add the (2 cups + 1/4 cup ) coriander seeds, 6 cardamom, 3-inch cinnamon, 6 cloves, 1-star anise, 1 small Bay leaf, 1/2 whole javitri (Mace), 1/2 tbsp whole black pepper.
  • Roast until they smell fragrant and they turn dark golden brown.
  • Remove the pan from heat and keep it aside until it cools down.
  • Once coriander seeds cool down, grind the coriander seeds to a powder. Transfer the powder to dry, airtight, glass jar.

Notes

Can store this powder for more than 2 months in an airtight container.
