Spices and spice condiments are the heart of Indian cooking, coriander powder is one of those. The homemade powder significantly enhances the flavor of the dish than the store brought. For making this homemade powders requires a bit of planning. I prepare this powder once a month, for freshness and aroma. You can store coriander powder for over 2months.
For the ground coriander powder to stay fresh longer, store it in an airtight container.
DO SPICES EXPIRE?
The spices have no expiration date as the days pass the aroma and freshness wanes.
HOW TO MAKE CORIANDER POWDER:
1 In a pan, add the (2 cups + 1/4 cup ) coriander seeds, 6 cardamoms, 4-inch cinnamon, 6 cloves, 1-star anise, 1 small Bay leaf, 1/2 whole javitri (Mace), 1/2 tbsp whole black pepper.
2 Roast until they smell fragrant and they turn dark golden brown.
3 Remove the pan from heat and keep it aside until it cools down.
4 Once coriander seeds cool down, grind the coriander seeds to a powder. Transfer the powder to dry, airtight, glass jar.
