Cluster beans with eggs | Gokarakaya

A simple and tasty side dish made with cluster beans, spices, and eggs. In the instant pot, it takes less than 15 minutes.

Ingredients

  • Cluster beans - 3 cups
  • Oil - 2 tbsp
  • Onion – Medium-sized or 1 cup
  • Curry leaves - 5
  • Green chili – 10 add less for mild spicy, finely chopped
  • Ginger garlic paste - 1 tbsp
  • Coriander powder - 1 tbsp
  • Salt
  • Eggs - 4

Instructions

HOW TO MAKE CLUSTER BEANS WITH EGGS:

  • Clean and chop the cluster beans in an inch size.
  • On SAUTE mode heat the oil and add mustard seeds, cumin seeds wait until they splutter.
  • Add the green chili, onion, curry leaves, ginger-garlic paste, saute for a few seconds. Then add cluster beans, turmeric, salt, and mix well. Turn off saute mode.
  • Whisk eggs in a bowl and add them on top of cluster beans. Don't mix them. Then add coriander powder on top.
  • Don’t mix it, for avoiding burnt bottom.
  • Place a trivet and keep a rice bowl on the trivet. Close the lid and set the instant pot on MANUAL or PRESSURE COOK for 8 min.
  • When count down is done, quick release and remove the pot which is on top.
  • Mix beans and egg together.
