Sheer khurma

Sheer khurma is a traditional dessert from Hyderabad. This is prepared during eid ul Fitr and in the month of Ramadan for iftar. The recipe I’m sharing today is made in an instant pot and it takes less than 15 minutes to prepare.

Ingredients

  • Fine vermicelli - 50 grams
  • Almond seeds - 10
  • Cashews - 10
  • Pistachios - 15
  • Dates - 1
  • Ghee - 1/4 cup or 3 tbsp
  • Water - 1 cup
  • Milk - 2 cups
  • Sugar - 1/2 cup
  • Cardamom - 1/ tsp

Instructions

HOW TO MAKE SHEER KHURMA IN INSTANT POT:1. On SAUTE mode, heat the ghee. Add raisins, fry them for a minute, and keep them aside.Raisins can cuddle the milk, add them at the end after Natural pressure release.

  • 2. Add finely chopped almonds, pistachios, cashews, and dates to ghee. Fry them until nuts turn to golden color.
  • 3. Then add vermicelli, water, whole milk, sugar, cardamom powder.
  • 4. Close the lid and set the instant pot on STEAM, adjust to NORMAL for 1 minute.
  • 5. When the count down is done, wait for natural pressure release.

    6. Mix raisins with milk and vermicelli. Enjoy your sheer khurma hot or cold.
  • CAN WE SUBSTITUTE WHITE SUGAR WITH BROWN SUGAR:
    Yes, of course. I make it with brown sugar most of the time but never add brown sugar directly to milk. Brown sugar will make milk curdle because of acids. I suggest you place a trivet and keep a sugar bowl with little water or you can add sugar at the end.
