To make gajar halwa, grate fresh carrots and soak them in water for 10 minutes. Drain the water, Peel the skin, grate them finely, or use the food processor.
In a pressure cooker add ghee, grated red carrots, nut powder, milk, sugar, and cardamom powder, and close the lid.
Cook for 5 whistles, turn off stove and release pressure after 5 minutes.
If you notice milk, cook until the milk evaporates and the mixture thickens. Serve hot or cold.
